Microclimate: The harsh winter, combined with the cool summer nights afforded by the high
altitude, allows for optimal ripening, preserving high acidity and enhancing the rich
aromatic potential of both varieties.

Vinification: The grapes are hand-harvested and transported to the winery. A classic white
vinification follows: pre-fermentation cold soak after chilling the grapes in a cooling
chamber, fermentation in stainless steel tanks at 15°C, and maturation on fine lees
at low temperature for a minimum of three months. months.

finish.
