Microclimate: Harsh winters combined with cool summer nights and the breeze of the Corinthian bay allow grapes to ripen slowly reaching perfect maturation, retaining acidity and fully developing the explosive flavors and aromas of the variety Sauvignon Blanc.

Harvest: 30th  August

Vinification: Grapes are handpicked and transported to the winery using refrigerated transport, they are then chilled to 7-8oC in cold storage and after cold soaked, followed by pneumatic press and classic white vinification. Fermentation at controlled temperatures of 16-17oC.

Tasting notes: Bright yellow colour with light grey hues. Intense citrus aromas and passion fruit, fully bodied with crispy acidity that strongly highlights the characteristics of the variety. Long lasting aftertaste.

Serving suggestions: Accompanies shellfish, seafood, pasta with white sauces and salads.

Serve at: 9-11 oC
