Mesoclimate:60 year old vines in goblet shape at 800m altitude protects the fruit and promote slow ripeness. High temperatures during the day up to 37 degrees Celsius. At 1200m, High Diurnal shift due to the high altitude. VSP trellis allows good exposure for fruit maturation. All vineyards are terraces.

Vinification method:Handpicked grapes open top oak barrels (300L) fermentation, 40 days skin contact, natural fermentation, regular punch downs, feet and hand pressed, no oenological additives.
Aromas:Mature bergamot and quinces are prevalent on the nose. Hints of white flowers and orange peel. Full body in the mouth with firm tannin structure. Lasting aftertaste.

Interesting Facts:This is the most widely planted white variety on the island. It has only now started to show its true potential. Evident to this, is its high versatility as a vine and a wine. Planted between 300m- 1490m in altitude. Tsiakkas winery produces 6 different expressions of this variety (Xynisteri, Pitsilia AOC, Rose (Blended), Orange, Commandaria and Zivania (Spirit).
