Santorini, Greece

Santorini Island has been producing wine since Antiquity. Its volcanic soil protected the vineyard from Phylloxera. Santorini vines are grown in the “koulara” method: they form a basket to protect them against strong winds and summer sun. Acroterra Santorini wine is a blend of three indigenous varieties: Assyrtiko, Aidani and Athyri. It is fermented in stainless steel tank and released after one year. Drinking well now, but will improve with time (at least ten years).
