VARIETIES: 100% MAVRODAPHNE
VINEYARDS:The Mavrodaphne grapes are sourced from three vineyards, the Gentili Estate at 60m, Omala vineyards at 650m and Thinia vineyards at an altitude of 80m.
SOIL:Gentilini grows Mavrodaphne in the well-drained limestone soils of Minies and Omala, as well as the rocky clay terroir of Thinia.
CLIMATE:A warm and temperate Mediterranean climate. Hot and dry summers with a cooler spring and wet winters. The Kefalonia vineyards benefit from the sea air and humidity.
VINIFICATION METHOD:All vinification and bottling is completed at the Gentilini winery. Once the bunches are destemmed and crushed, fermentation and extraction takes place in open vats. A small amunt is vinified in open barrels. A rotating schedule of pigeage and delastage is carried out manually 3 times a day for 30 days. The grapes are pressed when malolactic fermentation is complete, and the wine is transferred to French and American oak barriques to mature for 12 months before bottling. The wine is racked and returned twice during maturation. The wine is unfiltered.
