Terra Olympus – Terra Petra Rapsani

Terra Olympus is a project of Apostolos Thymiopoulos in the zone of RAPSANI, located on the south foothills of mount Olympus. The unique relief of the area with its spectacular vineyards, produces wines that balance ideally between finesse and concentration. The intervention in the vineyard as well as in the winery is minimal, enhancing properly the production of a wine with genuine expression of the “terroir” that it comes from.

MICROCLIMATE: Mediterranean climate, with the altitude in addition to the constant presence of air playing a crucial role in the retainment of freshness into the grapes.

VINIFICATION: Maceration lasts for 30 to 50 days, and is 20% “whole cluster”. Co-fermentation of the three varieties happens spontaneously and lasts for 60 days on average.

SOILS: Schist with a granitic and limestone based sub-soil.

ELEVANGE: 15 months in 500lt french oak barrels of second or third use.

VINEYARDS: All certified organic, with some biodynamic practices being applied. The altitude is between 400 to 600 metres. Half of the vineyards are 70 years old ungrafted vines, while the other half range from 15 to 35 years old.

VARIETIES: 50% Xinomavro, 35% Krassato, 15% Stavroto.

HARVEST: Beginning of October.
