VARIETY : 50% CABERNET SAUVIGNON 50% SYRAH
VINEYARDS : 20 hectares of organically cultivated vineyards on the slopes around Meteora and the prehistoric cave of Theopetra.
SOIL : Calcareous clay with slate subsoil.
CLIMATE : The mesoclimate of the region is continental, with rainy cold winters and sunny, hot and dry summers. The high diurnal temperature range during spring and summer allows intense and complex flavors to develop and slow maturation retaining high levels of acidity.
VINIFICATION : Hand-picked grapes. Berry selection and fermentation in French oak vats. Aging in 100% new tight-grain French oak barriques for 24 months and bottle aging for another 24 months.
SERVING SUGGESTIONS : Pairs well with wild game, smoked charcuterie and cheese.
TASTING CHARACTERISTICS : Fruity aromas of blackberry and blackcurrant, spicy aromas of black pepper, chocolate, sandalwood and hints of caramel Vigorous with velvet tannins and a long, complex aftertaste
