VARIETY: 100% Mavro Ambellisimo

VINEYARDS: Organically farmed vineyards in Paphos and Pitsilia ,Cyprus . Ungrafted vines at an altitude of 700-900 meters.

SOIL: Sandy volcanic.

CLIMATE: Cyprus has one of the warmest climates in the Mediterranean, with the average annual temperature on the coast being around 24C in the day and 14C at night. The warm temperatures allow fruit expression at the lower altitudes while at 900m, cool breezes allow a backbone of acidity to be formed.

HARVEST: September.

VINIFICATION METHOD: Handpicked grapes, Semi-carbonic maceration 60%, no pump overs, yeast selection – scaled fermentation, mid-way through the fermentation the must is pressed and the skins are returned to the fermentation tank, temperature controlled vats.

SERVING SUGGESTIONS: Pairs well with Cypriot meze, Beans, Moussaka, Sushi, Salads, Pork, Chicken, Rabbit.

TASTING CHARACTERISTICS: Aromas of roses, strawberry and wild cherries. Intense hints of dark chocolate. Notes of cinnamon and mocha. Light body in the mouth with playful tannins and refreshing acidity. Enduring aftertaste.
